Why use a portion scoop or a disher?

I believe that every home kitchen should have at least three to four sizes of portion scoops in their gadget drawer.  You will have perfect, uniform and consistent product every time.  As a pastry chef and chef instructor I find these to be my most important tool in finishing cookies, especially at Christmas time.

I need to produce a minimum of 400 pounds of assorted Christmas cookies every year with my students.  Having the use of these assures me that no matter which of the 30 students are scooping cookies that they will be uniform in size.  At home consistency is just as important to me as well.

Not only are the a must have for cookie production they are also great for making uniform meatballs, cupcakes, icream and fruit balls.

With baking time, if every cookie or cupcake is scooped the same size then they will all be done at the same time. Eliminating the possibility that some are perfect, some are over baked and others are a little gooey in the center.

In a professional kitchen, besides the finished quality it ensures that all your customers are receiving a uniform product.  This way no one is then looking for the largest cookie in the pastry case.

Available at any kitchen store and also available online. Portion scoops  are affordable and come in different styles to accommodate right and left handed bakers.
