Chilled Dill Pickles
My cucumbers are starting to be plentiful from the vegetable garden just about a bowlful every day. I used to make pickles that went thru the canning process, but the result is not a crisp and crunch product. I love chilled dill pickles and have played with this recipe every year. Of course you can alter the recipe to your liking by adjusting the ingredient amounts, but be careful with the salt and vinegar a little goes a long way. Mise en place
- quart size canning jars
- plastic screw top lids or other
- sauce pan
- ladle
- Large non reactive bowl, glass or stainless steel
- dinner or salad plate
Recipe:
- 10-12 cucumbers, washed
- 2 c. Water
- 1 1/2 c. Vinegar, white or cider
- 1 Tbls. Salt, canning or kosher
- 1 Tbls. Sugar
- 1 tsp. pickling spice
- 6 garlic cloves, large
- 3 heads fresh dill (or 2 Tbls. dry dill weed and 1 Tbls. dill seed)
- 1 tsp. pickle crisp (optional, but worth the purchase)
Combine water, vinegar, salt, sugar and pickling spice in a sauce pan, bring to a boil, remove from the heat and let cool to room temperature.
Clean and trim the flower and stem end off of each cucumber. Slice in half, quarters or slices, whichever you prefer. Place cukes into the large non reactive bowl, add the garlic and fresh dill (use stem flower and all for maximum dill flavor). Pour over cooled brine.
Cover with a plate to keep cucumbers submerged in the brine. Cover the top with plastic wrap and store in the refrigerator for 48 hours.
After 48 hours the pickles are ready to eat, of course full flavor develops within a week. Place our fresh dill pickles into quart size containers or any other non reactive bowl or jar of your choice, pour brine over and cover pickles, seal container with ball wide-mouth plastic storage caps. Store in the fridge for up to 8 months.
Don’t discard the juice!!
