Florentine Meatballs

Florentine Meatballs are hearty, healthy, protein rich and gluten friendly. Pair with our Garden Fresh Tomato Sauce and you have the beginnings to a great meal.

I have made this recipe with ground turkey, chicken, beef and lamb or a combination of them. Baking them saves time and mess of spattering up the stove. Since there are no breadcrumbs it is gluten friendly, check the label on your Parmesan cheese if this is a concern. Time: 45-60 minutes Difficulty: Easy

Recipe:

-2 pounds ground, beef or protein of your choice
-1 Tbls. Garlic, minced
-1/2 c. Carrot, grated
-1/4 c. Onion, small dice
-1 c. Packed, fresh chopped spinach
-1/4 c. Parmesan cheese, grated
-2 Eggs, large
-1 tsp. Salt
-1/2 tsp. Black pepper

Preheat oven to 400°F. Combine all ingredients together in a bowl. Work with hands until well combined.

Form you meatballs as you wish. I like to use portion scoops, they come in many sizes so you can choose what is best for your needs. They make all your meatballs (cookies too) uniform in size. I choose the #24 red scoop. Here is a link to understanding the use of #’s on these scoops. In the foodservice industry they are also known as dishers.

You can see how nice each and every meatball is the same size. This also allows for equal baking time.

Bake for 15 minutes.  Add to sauce or store for later use.
