Oatmeal Monster Cookies
This delicious anytime of the year oatmeal monster cookie is flourless and loaded with many treats. Variations on this recipe can be made by changing up the nut butter, types of chocolate and candy pieces. Scoop and freeze and bake any time you need a warm cookie fix!
Time: 1 hour Difficulty: Easy Yield: 36 cookies (#24 portion scoop)
Recipe:
- 1 cup brown sugar
- 3/4 cup granulated sugar
- 1 stick butter, softened
- 1 Tbls. Molasses
- 1- 1/2 cups peanut butter, creamy
- 1 tsp. salt
- 2 tsp. baking soda
- 3 eggs, large
- 2 tsp. vanilla
- 4 1/2 cups oats, old fashioned
- 1 cup chocolate chips
- 1 cup chopped nuts (your choice)
- 3/4 cups M&M’s candies (I like the mini)
In large mixing bowl combine the first 7 ingredients on the list with a hand mixer. Mix until light and fluffy.
Add eggs and vanilla, mix to combine.
Add oats and mix on low speed, scrape down bowl and mix to combine well.
Add chocolate chips, M&M’s and nuts, combine by hand with a spoon on spatula.
Refrigerate dough for 1-2 house before scooping.
Scoop dough onto lightly sprayed cookie sheet using a #24 portion scoop. Bake at 350°F for 10-12 minutes depending upon the size of the cookie.
Let cool on pan for 5 minutes then transfer to a cooling rack.
